This simple and delicious crockpot chuck roast and pepperoncini’s meal is a great addition to your dinner menu that your family will love.

My family loves this crockpot chuck roast and pepperoncini’s! It has been a weekly staple in our house for months now and it never gets old.
There are so many ways to pair it with different sides, sandwiches (with homemade sourdough bread!), nachos, and salads that the possibilities are endless to never get tired of this dish.
The crockpot has got to be one of the best inventions ever made. I mean come on, right!? You put your meal in the crockpot and it’s ready by dinner with little to no effort! Amazing!
Not to mention that you get to smell it cook all day long!
What you’ll need
- 2 lb Chuck roast
- 1 jar of Pepperoncini’s- I like to get the ones that are already sliced but whole ones work too!
- Crockpot or Instant Pot
- Your favorite seasonings- I typically just use a little garlic salt
- Optional ingredients- potatoes, sweet potatoes, veggies, salad greens, salad dressing

1. Serve over roasted potatoes/sweet potatoes and veggies
One was to serve your tender and juicy crockpot chuck roast and pepperoncini’s is to serve it over your favorite roasted veggies and potatoes. You really can’t go wrong with the veggies you choose because the tenderness of the roast and the slight spiciness of the pepperoncini’s pairs so nicely together.
I have roasted veggies such as sweet potatoes, potatoes, cauliflower, broccoli, bell peppers, onions, and squash just to name a few. And every time, it tastes heavenly!
2. Add to a salad with veggies
Another great option is to make yourself your favorite salad with veggies, and add the chuck roast and pepperoncini’s to it.
Can’t go wrong with a big salad and tasty protein to go with it!

3. Healthy “nachos”
Ok! This is probably my favorite way to use this amazingly delicious crockpot chuck roast and pepperoncini’s!
I first like to slice the sweet potatoes into rounds so that they are about the thickness of a chip or maybe a little thicker. You can also use a mandoline slicer. Way quicker and easier to keep the thickness consistent. Just watch those fingers:)

Next, lightly brush them with olive oil and sprinkle with a little salt and place them on a baking sheet. Place them in the oven and bake them until they are to your liking of crispiness. Typically between 25-30 minutes.
Chop up any additional veggies or toppings you like. I like to add green onions, avocado or guacamole, olives, and tomatoes! Nothing is off limits!
Once the sweet potatoes are done in the oven, take them out and layer them with the chuck roast and pepperoncini’s and all the additional toppings you have chosen.

Crockpot Chuck Roast and Pepperoncini’s
Equipment
- Crockpot or Instant Pot
Ingredients
- 2 lb Chuck Roast
- 1 Jar Sliced Pepperoncini's
- 1 tsp Garlic Salt
Instructions
- Place chuck roast in crockpot or instant pot.
- Pour pepperoncini's and half of the liquid over the chuck roast.
- Sprinkle the garlic salt over the chuck roast and pepperoncini's.
- Cover with lid and place on high for 6 hours or low for 8 hours.
- Once fully cooked, pull apart with forks and serve over your choosing. Enjoy!
