These nutrient packed and delicious morning glory breakfast cookies will become a new breakfast staple in your home especially for your picky toddlers. The best part, is that you can sneak in veggies and they will never know it! Another bonus, there is no refined sugar and they still taste amazing!
I have been experimenting with different ways to “spice up” my toddler’s breakfast with things he will actually eat that are beneficial to him at the same time.
One of the great things about these cookies too, is that most likely, you will already have the majority of these ingredients in your fridge and pantry already. It’s a win win:)
After a couple different attempts, with different ingredients, I finally found the right combination for my toddler and he loves them!
Try this delicious morning glory breakfast cookie recipe below and then experiment with different combinations as well to find what you and your family find the most tasty.
Ingredients for these delicious cookies
- Almond butter
- Eggs
- Maple syrup
- Oat flour (I use gluten free oats and blend them in a blender until it’s fine like a flour consistency.)
- Salt
- Baking soda
- Cinnamon
- Shredded coconut
- Apple
- Carrots
- Pumpkin seeds
- Sunflower seeds
- Raisins
How to make morning glory breakfast cookies
- Preheat your oven to 350 degrees and line a cookie sheet with parchment paper
- In a medium bowl, mix together together almond butter, eggs, vanilla, and maple syrup.
- In a separate bowl, mix together, flour, baking soda, cinnamon, and salt.
- Pour the flour mixture into the wet mixture and stir until well combined.
- Shred your apples and carrots and stir into batter
- Place sunflower seeds, pumpkin seeds, and walnuts in blender and pulse until they are smaller. Then stir into batter until fully incorporated.
- Drop cookie dough (whatever size you like) onto parchment and bake for 15-17 minutes.
- Let them cool for 5 minutes then enjoy with a delicious cup of coffee (or milk for your toddlers:))!
Variations of morning glory breakfast cookies
- Muffins- line muffin tins with liners (or coat tins with olive oil), pour batter evenly into each muffin tin and bake at 350 degrees for 15-20 minutes
- Bars- line a baking dish with parchment (or coat dish with olive oil) and pour batter into pan, spread out evenly and bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.
- Switch up your ingredients! Try things like:
- shredded zucchini
- walnuts, pecans, almonds, or pistachio’s
- sunflower seeds, hemp seeds, chia seeds, or pumpkin seeds
- honey
- dates
- chocolate chips
- oat flour, almond flour, cassava flour, coconut flour
- sunflower butter, cashew butter, or peanut butter
Have fun with these and experiment with different ingredients!
These cookies make for a great grab and go breakfast if you are in a hurry and need something quick. Plus, how often do your kiddos get to say they ate cookies for breakfast:)
